Why We Spent Fifteen Thousand Dollars on a Clay Oven
Most Brantford Indian restaurants don't have a tandoor. The ovens cost fifteen thousand dollars. Installation and ventilation add another five thousand. We bought one anyway because authentic tandoori cooking requires it. A conventional oven reaches 450 degrees maximum. Our tandoor reaches 900. That's twice the heat. The high temperature creates char marks on chicken and black spots on naan bread. Tandoori chicken takes twelve minutes in the oven on skewers. The outside gets crispy and charred.
